The course consists of :
MULTIMEDIA SHOW
- Introduction – peculiarities of Japanese cuisine, comparison with other Eastern cuisines, principles of Japanese culinary art;
- History of sushi and sushi today;
- Raw materials – a thorough discussion including local substitutes (including: fish, seafood, rice, rice vinegar, seaweed, vegetables, soy sauce, wasabi, ginger, etc.).
PRACTICAL EXERCISES
- Preparation of raw materials (making and cutting fish and seafood, cutting vegetables);
- Preparation of processed ingredients (cooking rice, making mortar, seasoning rice, frying tamago omelet);
- Demonstration of sushi preparation: nigiri, hosomaki, futomaki, uramaki, chirasi;
- Training of participants, preparing individual forms on their own;
- Composing sushi sets;
- Good manners at the Japanese table;
- Tasting.
